Macadamia Rocky Road

Ingredients 

90 gram roasted macadamia pieces 180 gram packet marshmallows 1/2 cup dried cranberries

375 gram chocolate buttons 1/4 cup coconut (optional)

Instructions

1. Mix together the macadamias, marshmallows, cranberries and coconut.
2. Melt the chocolate in a microwave or in a heat proof bowl placed over a pot of simmering water.
3. Pour cooled melted chocolate evenly over the marshmallow mixture.
4. Spoon mixture into a 18 cm square cake tin lined with baking paper.
5. Refrigerate until set. Cut into pieces with a sharp knife.
6. Store in an airtight container in the fridge or a cool place.
