Chocolate Macadamia Biscotti

Ingredients 

2 TB cocoa
175gram castor sugar
1/2 tsp baking powder

 

3 eggs lightly beaten
Grated rind of an orange
150 gram roast  macadamias, chopped

Instructions

  1. Mix flour, baking powder, cocoa and sugar in a bowl and mix well.
  2. In a separate bowl combine eggs, orange rind and macadamia nuts. Mix well.
  3. Make a well in the centre of the dry ingredients and pour in the egg mixture to make a dough.
  4. Turn dough onto a lightly floured surface and divide in half. Shape each half into a log.
  5. Place on a baking sheet and bake at 200C for 15 minutes.
  6. Remove from oven and when cool, cut into thick slices.
  7. Place slices on baking sheet and bake a further 10 minutes.
  8. Cool on a wire rack and store in an airtight container.
